Chicken Thigh In Vinegar Recipe
Ingredients:
- 3 lbs chicken thighs
- 2 cups red wine
- 1/2 cup red wine vinegar
- 4 cloves of garlic, peeled
- 1/8 tablespoon salt
- 1 tablespoon pepper
- 2 tablespoons vegetable oil
- 1 tablespoon butter
- 1 teaspoon thyme
- 6 large shallots, diced
- 1 bay leaf
- 1 parsley, chopped
Instructions:
1. In a mixing bowl, add in the chicken thighs and season it with salt and pepper.
2. Preheat the skillet or wok and add in the vegetable oil. When the oil turned hot, add in the chicken thighs and brown both sides. After that, add in the garlic, bay leaf and thyme and stir fry them.
3. Cover and switch to medium heat and let it cook for another 4 minutes. Pour in half the red wine vinegar, stir, cover and let it cook for another 3 minutes.
4. Add in the diced shallots and pour in the red wine and the other half of the red wine vinegar. Cover and let it simmer for another 1 hour.
5. Remove the chicken thighs from the skillet and place them on a plate. Spread the butter over the chicken thighs and sprinkle some chopped parsley over them.
