Curry Chicken Thighs
If you love curry, you will no doubt love curry chicken and one of the best chicken parts for cooking curry is the thigh. If you want to make delicious curry chicken thighs, you want to use free range chicken meat because the quality of the meat is better and more flavorful. The best way to enjoy this dish is to serve it over cooked rice.
And here's the recipe for making curried chicken thighs!
Ingredients:
- 6 chicken thighs
- 1/2 teaspoon curry
- 1/2 cup chicken broth
- 1/2 teaspoon dry mustard
- 1 1/2 cup onion, chopped
- 3 cups garlic
- 3 tablespoon horseradish
- 1 tablespoon hot taco sauce
- 2 tablespoons honey
- 1/2 teaspoon ginger
- 2 ripe mangos
- 1 ripe papaya
- salt and pepper to taste
Instructions:
1. In a frying pan, add in the oil and add in the garlic. Sauté the garlic until tender.
2. Add in the ginger, mustard and carry then continue sautéing until you can smell the fragrant flavors.
3. In a mixing bowl, add in the papaya and mangoes then mash them together and add in the chicken broth, onion, horseradish, hot taco sauce, honey, salt and pepper. Let it simmer for 15 minutes.
4. Now, place the chicken thighs in a shallow baking dish and pour the sauce over them. Store in the refrigerator for 2 hour or overnight to let them marinate.
5. Bake for 90 minutes at 350°F (177°C).
